Gluten-Free Vegan Applesauce Oat Cake

✅ Ingredients:

  • 1 ½ cups oat flour (or blend rolled oats into flour)

  • ½ cup almond flour (adds softness and flavor)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp cinnamon

  • ¼ tsp nutmeg (optional)

  • ¼ tsp salt

  • 1 tbsp ground flaxseed + 2½ tbsp water (flax egg)

  • 1 cup unsweetened applesauce

  • ⅓ cup maple syrup (or agave nectar)

  • ¼ cup neutral oil (or nut butter for oil-free option)

  • 1 tsp vanilla extract

  • ½ cup chopped walnuts or raisins (optional)

🥣 Instructions:

  1. Preheat oven to 350°F (175°C). Line an 8×8″ baking dish with parchment or lightly grease it.

  2. Prepare flax egg: In a small bowl, combine flaxseed and water. Let sit for 5 minutes to gel.

  3. Mix dry ingredients in a large bowl: oat flour, almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  4. Mix wet ingredients in another bowl: applesauce, maple syrup, oil, vanilla, and flax egg.

  5. Combine wet and dry ingredients, stirring until just mixed. Fold in nuts/raisins if using.

  6. Pour batter into prepared pan and smooth the top.

  7. Bake for 30–35 minutes, or until the center is firm and a toothpick comes out clean.

  8. Cool completely before slicing. Optional: dust with cinnamon or drizzle with maple glaze.
