Ingredients

  • 1 cup each cauliflower, broccoli, carrots, green beans

  • 1 cup baby corn, 1 cup cabbage, 1 red + 1 green bell pepper (sliced)

  • 1 onion (sliced), 3 garlic cloves (minced)

  • 200 g firm tofu (cubed & pan-fried)

  • 2 tbsp soy sauce, 1 tbsp vegan oyster/mushroom sauce

  • 1 ½ cups veg broth, 1 tbsp cornstarch (dissolved in ½ cup water)

  • Salt, pepper & sesame oil (optional)

Method

  1. Fry tofu until golden, set aside.

  2. Sauté onion & garlic in oil.

  3. Add hard veggies (carrots, cauliflower, broccoli, beans) – stir-fry 3 mins.

  4. Add softer veggies (bell peppers, baby corn, cabbage).

  5. Pour broth + sauces, simmer 2–3 mins.

  6. Stir in cornstarch slurry to thicken.

  7. Return tofu, mix well, season to taste.

  8. Garnish with spring onions.
