Vegan Coffee Caramel Sundae with Coconut Cream and Almond Praline

🛒 Ingredients

For the Sundae:

  • 2–3 scoops vegan coffee or chocolate ice cream

  • Dark chocolate shavings, nuts, or crushed cookies (optional)

Boozy Caramel Sauce:

  • ½ cup coconut cream

  • ¼ cup jaggery or coconut sugar

  • 1 tbsp maple syrup

  • 1 tbsp dark rum or brandy

  • ½ tsp vanilla extract

  • Pinch of salt

Optional Almond Praline:

  • ¼ cup chopped roasted almonds

  • ¼ cup brown sugar or coconut sugar

👩‍🍳 Instructions

  1. Make Caramel: Simmer coconut cream, jaggery, maple syrup & salt until thick (5–7 mins). Stir in vanilla + rum.

  2. (Optional) Praline: Melt jaggery in a pan, stir in almonds, spread on parchment, cool, and break into shards.

  3. Assemble: Scoop ice cream, drizzle warm caramel, top with chocolate, praline, or nuts. Serve immediately.
