Ingredients

  • 1 pizza dough

  • 1 tbsp olive oil

  • Cashew Cream: 1 cup soaked cashews, 2 garlic cloves, ½ cup water, 2 tbsp nutritional yeast, 1 tbsp lemon juice, salt & pepper

  • ½ cup almond ricotta (or store-bought)

  • 2 tbsp vegan parmesan (optional)

  • 1 cup spinach, 1 cup mushrooms (sautéed)

  • 1 onion (caramelized)


Instructions

  1. Preheat oven to 220°C (425°F).

  2. Blend cashew cream ingredients until smooth.

  3. Caramelize onion; sauté mushrooms & spinach.

  4. Roll dough, brush with olive oil, spread cashew cream.

  5. Add ricotta, parmesan, onions, mushrooms & spinach.

  6. Bake 12–15 mins until crust is golden.

  7. Sprinkle chili flakes or herbs, slice & serve.
